Our Philosophy

Let the guest sojourning here know that in this home our life is simple. What we cannot afford we do not offer, but what good cheer we can give...we give gladly.

We make no strife for appearance sake. Know also friend that we live a life of labor, therefore, if at times we separate ourselves from thee, do ye occupy thyselves according to thine heart's desire.

We will not defer to thee in opinion or ask thee to defer to us. What thy think thy shall say, if ye wish, without giving offense. What we think... we also say, believing that truth has many aspects and that love is large enough to encompass them all.

So while ye tarry here with us we would have thee enjoy the blessings of a home, health, love and freedom, and we pray that thou might find the final blessing of life......

PEACE

  4. I have been following you in my google reader for close to 2 years. Several days ago, I chose to go back to your beginning are read everything you had posted. It took me awhile but I finally came up to our current year. I just had to drop you a note to let you know how much I enjoy your blog: your writing style keeps my attention and get my butt up off my chair to spur me back into action. You and your husband accomplish so much in a years time that I am constantly amazed! God has a plan for you and I think this is one of his plans :) With your words and photos, you teach and inspire and that is a good thing. I thank you for all you do. Signed, Sally in Seattle

  6. Hey, I found your blanching Okra and freezing breaded okra post and will be following that to the letter soon. I am curious though if I can use the same process for both summer squash and zucchini? Would love to have some breaded up and ready to fry later in the year and hope that would work for them too.

Just started following you on Pinterest and looking forward to some good hints and easier ways to process foods. I have a long history of gardening, canning and freezing foods but no longer able to keep this 66 year old degenerative body of mine in the huge 1/2 acre gardens of old.  I can find all sorts of fruit trees in the area not being used and get some young people and have them do the heavy work of lifting & picking them while sharing with them the spoils.

I do enjoy teaching young people how to make jams & jellies and canning other produce. Any way I can keep these skills going on to the future, I will pass along information that I learned from grandparents, friends and other family.

    God Bless!!

    1. I have frozen breaded squash and zuchini and even breaded green tomatoes. My only suggestion is maybe freezing them in some sort of a dish so the breading doesn't get knocked off or being very careful that they are completely frozen on cookie sheets before bagging. Then careful where you put them in the freezer. If you throw other bags on the top of them it can knock the breading off. Bake frozen or fry frozen.
